Yemeni Spiced Cauliflower Curry (Qursan Bel-Qaliya)
Qursan Bel-Qaliya is a traditional Yemeni dish featuring spiced cauliflower in a rich and flavorful curry sauce. This vegetarian dish is packed with aromatic spices and is perfect for a comforting and satisfying meal.
Ingredients
- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
- Add the cauliflower florets, diced tomatoes, and coconut milk. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce the heat and let it cook for 15-20 minutes, or until the cauliflower is tender.
- Adjust the seasoning if needed and serve the Qursan Bel-Qaliya hot, garnished with fresh cilantro.
