Yemeni Spiced Cauliflower Curry (Qursan Bel-Qaliya)

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir and cook for 1-2 minutes until fragrant.
  3. Add the cauliflower florets, diced tomatoes, and coconut milk. Season with salt and pepper.
  4. Bring the mixture to a simmer, then reduce the heat and let it cook for 15-20 minutes, or until the cauliflower is tender.
  5. Adjust the seasoning if needed and serve the Qursan Bel-Qaliya hot, garnished with fresh cilantro.
