Yemeni Spiced Chickpea and Spinach Curry (Humus Bel-Sabanikh)

Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 4 cups fresh spinach, chopped
- 1 cup vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, ground turmeric, cayenne pepper, and salt. Cook for 2 minutes, stirring constantly.
- Add the chopped spinach and cook until wilted, about 3 minutes.
- Pour in the vegetable broth and cooked chickpeas. Simmer for 15 minutes, stirring occasionally.
- Stir in the lemon juice and adjust seasoning to taste.
- Serve the Humus Bel-Sabanikh hot, with rice or flatbread.
