Yemeni Spiced Chickpea and Spinach Curry (Humus Bel-Sabanikh)

Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 4 cups fresh spinach, chopped
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, ground turmeric, cayenne pepper, and salt. Cook for 2 minutes, stirring constantly.
  3. Add the chopped spinach and cook until wilted, about 3 minutes.
  4. Pour in the vegetable broth and cooked chickpeas. Simmer for 15 minutes, stirring occasionally.
  5. Stir in the lemon juice and adjust seasoning to taste.
  6. Serve the Humus Bel-Sabanikh hot, with rice or flatbread.
