Yemeni Spiced Chickpea Curry (Hummus Bel-Qaliya)

Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
- Pour in the diced tomatoes and vegetable broth. Stir to combine, then add the cooked chickpeas. Season with salt and black pepper to taste.
- Simmer the curry for 20-25 minutes, stirring occasionally, until the flavors have melded together and the sauce has thickened.
- Once the curry is ready, remove it from the heat and garnish with fresh cilantro.
- Serve the Hummus Bel-Qaliya hot with rice or flatbread.
