Yemeni Spiced Chickpea Curry (Hummus Bel-Qaliya)

Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegetable broth
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Pour in the diced tomatoes and vegetable broth. Stir to combine, then add the cooked chickpeas. Season with salt and black pepper to taste.
