Yemeni Spiced Chickpea Stew (Foul Bel-Zeit)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 4 cups water

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the diced tomatoes, ground cumin, ground coriander, ground turmeric, cayenne pepper, and salt to the pot. Cook for a few minutes, stirring occasionally.
  3. Drain the soaked chickpeas and add them to the pot. Stir to coat the chickpeas with the spice mixture.
  4. Pour in the water and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour, or until the chickpeas are tender.
  5. Adjust the seasoning with salt if needed. Serve the Foul Bel-Zeit hot, with a side of flatbread or rice.
