Yemeni Spiced Chickpea Stew (Foul Bel-Zeit)
Foul Bel-Zeit is a traditional Yemeni spiced chickpea stew that is packed with flavor and nutrients. It's a comforting and hearty dish that is perfect for a cozy family meal or a gathering with friends.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 4 cups water
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced tomatoes, ground cumin, ground coriander, ground turmeric, cayenne pepper, and salt to the pot. Cook for a few minutes, stirring occasionally.
- Drain the soaked chickpeas and add them to the pot. Stir to coat the chickpeas with the spice mixture.
- Pour in the water and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour, or until the chickpeas are tender.
- Adjust the seasoning with salt if needed. Serve the Foul Bel-Zeit hot, with a side of flatbread or rice.
