Yemeni Spiced Lentil and Vegetable Curry (Marak Adas Bel-Khudra)

Ingredients

  • 1 cup dried brown lentils
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 carrots, diced
  • 2 potatoes, diced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Stir in the cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  3. Add the carrots, potatoes, and lentils to the pot, and pour in the vegetable broth. Season with salt and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
  5. Adjust the seasoning if needed, and serve the Marak Adas Bel-Khudra hot, garnished with fresh cilantro.
