Yemeni Spiced Lentil and Vegetable Curry (Marak Adas Bel-Khudra)
Marak Adas Bel-Khudra is a traditional Yemeni spiced lentil and vegetable curry that is packed with flavor and nutrients. This hearty and comforting dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1 cup dried brown lentils
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 2 carrots, diced
- 2 potatoes, diced
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Stir in the cumin, coriander, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the carrots, potatoes, and lentils to the pot, and pour in the vegetable broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
- Adjust the seasoning if needed, and serve the Marak Adas Bel-Khudra hot, garnished with fresh cilantro.
