Yemeni Spiced Lentil Soup with Spinach (Shorba Adas Bel-Sabanikh)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 6 cups vegetable broth
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, ground cumin, ground coriander, and turmeric. Cook for 1-2 minutes until fragrant.
  3. Stir in the rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.
  4. Add the chopped spinach to the pot and cook for an additional 5 minutes until wilted.
  5. Season with salt and pepper to taste.
  6. Serve the Shorba Adas Bel-Sabanikh hot, garnished with a drizzle of olive oil and a sprinkle of cumin if desired.
