Yemeni Spiced Lentil Soup with Spinach (Shorba Adas Bel-Sabanikh)
Shorba Adas Bel-Sabanikh is a traditional Yemeni spiced lentil soup with spinach that is both hearty and flavorful. This comforting soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 6 cups vegetable broth
- 4 cups fresh spinach, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground cumin, ground coriander, and turmeric. Cook for 1-2 minutes until fragrant.
- Stir in the rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.
- Add the chopped spinach to the pot and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste.
- Serve the Shorba Adas Bel-Sabanikh hot, garnished with a drizzle of olive oil and a sprinkle of cumin if desired.
