Yemeni Spiced Okra Stew (Bamia Bel-Zeit)

Ingredients

  • 1 pound okra, washed and trimmed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 2 tomatoes, chopped
  • 1 tablespoon tomato paste
  • 2 cups vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, ground coriander, ground turmeric, cayenne pepper, and salt. Cook for 1-2 minutes until fragrant.
  4. Add the chopped tomatoes and tomato paste, and cook for another 5 minutes, stirring occasionally.
  5. Add the okra and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the okra is tender.
  6. Adjust the seasoning if needed, then serve the Bamia Bel-Zeit hot, garnished with fresh cilantro.
