Yemeni Spiced Potato Curry (Batata Bel-Qaliya)

Ingredients

  • 4 large potatoes, peeled and diced
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 tomatoes, diced
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
  2. Add the diced potatoes, ground cumin, turmeric, coriander, cinnamon, and cayenne pepper to the pot. Stir well to coat the potatoes with the spices.
  3. Pour in the vegetable broth and add the diced tomatoes. Season with salt to taste.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked, remove the pot from the heat and garnish with fresh cilantro.
