Yemeni Spiced Potato Curry (Batata Bel-Qaliya)
Batata Bel-Qaliya is a traditional Yemeni spiced potato curry that is bursting with flavor and warmth. This comforting dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 4 large potatoes, peeled and diced
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 2 tomatoes, diced
- 2 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
- Add the diced potatoes, ground cumin, turmeric, coriander, cinnamon, and cayenne pepper to the pot. Stir well to coat the potatoes with the spices.
- Pour in the vegetable broth and add the diced tomatoes. Season with salt to taste.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, remove the pot from the heat and garnish with fresh cilantro.
