Ingredients
- 1 cup red lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 can (14 oz) coconut milk
- 2 tomatoes, chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 2 cups vegetable broth
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and sauté until translucent.
- Add the garlic and ginger, and cook for another 2 minutes.
- Stir in the tomatoes, turmeric, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
- Add the red lentils, coconut milk, and vegetable broth. Season with salt and black pepper. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
- Garnish with fresh cilantro before serving.
