Yemiser Selatta Firfir (coconut Lentil Curry)

Ingredients

  • 1 cup red lentils
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tomatoes, chopped
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and sauté until translucent.
  2. Add the garlic and ginger, and cook for another 2 minutes.
  3. Stir in the tomatoes, turmeric, cumin, and paprika. Cook for 5 minutes, stirring occasionally.
  4. Add the red lentils, coconut milk, and vegetable broth. Season with salt and black pepper. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
  5. Garnish with fresh cilantro before serving.
