Yemiser Selatta (red Lentil Soup)

Ingredients

  • 2 cups red lentils, rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Add the minced garlic, ground cumin, turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
  4. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste, and stir in the lemon juice.
  6. Remove from heat and let the soup cool slightly before serving.
