Yemiser Selatta (red Lentil Soup)
Yemiser Selatta, also known as Red Lentil Soup, is a popular and nutritious dish in Eritrean cuisine. This hearty soup is packed with flavor and is perfect for a cozy meal on a chilly day.
Ingredients
- 2 cups red lentils, rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, ground cumin, turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
- Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils are tender.
- Season with salt and pepper to taste, and stir in the lemon juice.
- Remove from heat and let the soup cool slightly before serving.
