Yemista Domates (greek-style Stuffed Tomatoes)

Ingredients

  • 4 large tomatoes
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the flesh. Sprinkle the insides with salt and set aside.
  3. In a large bowl, combine the rice, onion, garlic, parsley, mint, olive oil, salt, and pepper. Mix well.
  4. Stuff the tomato shells with the rice mixture and place the tomato tops back on.
  5. Place the stuffed tomatoes in a baking dish, drizzle with a little more olive oil, and bake for 1 hour, or until the tomatoes are tender and the rice is cooked.
