Ingredients
- 4 large tomatoes
- 1 cup rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the flesh. Sprinkle the insides with salt and set aside.
- In a large bowl, combine the rice, onion, garlic, parsley, mint, olive oil, salt, and pepper. Mix well.
- Stuff the tomato shells with the rice mixture and place the tomato tops back on.
- Place the stuffed tomatoes in a baking dish, drizzle with a little more olive oil, and bake for 1 hour, or until the tomatoes are tender and the rice is cooked.
