Yemista Yum
Yemista Yum is a traditional Cypriot dish that features delicious stuffed vegetables. This recipe is a perfect combination of fresh vegetables, flavorful herbs, and savory rice, all baked to perfection. It's a great option for a healthy and satisfying meal.
Ingredients
- 4 large tomatoes
- 4 green bell peppers
- 2 zucchinis
- 1 onion, finely chopped
- 1 cup rice
- 1/4 cup olive oil
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes, peppers, and zucchinis. Scoop out the flesh and seeds from the tomatoes and peppers, leaving a sturdy shell. Scoop out the flesh from the zucchinis, leaving a boat-like shape.
- In a bowl, combine the chopped onion, rice, olive oil, parsley, mint, salt, and pepper. Mix well.
- Stuff the vegetables with the rice mixture and place them in a baking dish.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the rice is cooked.
- Serve hot and enjoy!
