Ingredients

  • 4 large tomatoes
  • 4 green bell peppers
  • 2 zucchinis
  • 1 onion, finely chopped
  • 1 cup rice
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes, peppers, and zucchinis. Scoop out the flesh and seeds from the tomatoes and peppers, leaving a sturdy shell. Scoop out the flesh from the zucchinis, leaving a boat-like shape.
  3. In a bowl, combine the chopped onion, rice, olive oil, parsley, mint, salt, and pepper. Mix well.
  4. Stuff the vegetables with the rice mixture and place them in a baking dish.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and the rice is cooked.
  7. Serve hot and enjoy!
