Ingredients
- 4 large bell peppers, assorted colors
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the cooked quinoa, black beans, corn, tomatoes, onion, garlic, cumin, chili powder, salt, and pepper.
- Stuff each bell pepper with the quinoa mixture, pressing down gently to pack the filling.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove the foil and sprinkle the shredded cheese on top, if using.
- Bake for an additional 5-10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
