Yin-Yang Zoodle Stir-Fry (阴阳炒面)

Ingredients

  • 2 zucchinis, spiralized
  • 1 carrot, julienned
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1/2 cup sliced shiitake mushrooms
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1/4 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pan or wok over medium-high heat.
  2. Add garlic and ginger, and stir-fry for 1 minute.
  3. Add the zucchini, carrot, bell peppers, snap peas, and mushrooms. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce, honey, and vegetable broth. Pour the sauce over the vegetables and toss to combine.
  5. Cook for another 2-3 minutes until the sauce thickens slightly.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve hot.
