Yogurt Curry (sindhi Kadi)

Ingredients

  • 1 cup yogurt
  • 2 tablespoons gram flour (besan)
  • 1 teaspoon turmeric
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 tablespoons oil
  • 2 dried red chilies
  • 10-12 curry leaves
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon salt
  • 4 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. In a bowl, whisk together the yogurt, gram flour, turmeric, red chili powder, and salt.
  2. Heat oil in a large pot over medium heat. Add cumin seeds, mustard seeds, dried red chilies, curry leaves, and fenugreek seeds. Cook until the seeds start to splutter.
  3. Pour the yogurt mixture into the pot and stir continuously to avoid lumps.
  4. Add water and bring the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.
  5. Garnish with fresh coriander leaves and serve hot with steamed rice.
