Ingredients
- 2 cups yogurt
- 1/4 cup gram flour (besan)
- 1 onion, finely chopped
- 1/2 inch ginger, grated
- 1 green chili, chopped
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 1/2 tsp fenugreek seeds
- 1/2 tsp mustard seeds
- 1/4 tsp asafoetida (hing)
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 10-12 curry leaves
- 1/4 cup fresh cilantro, chopped
- 3 cups water
- Salt to taste
- Oil for frying
- 1/2 cup sliced vegetables (onion, bell pepper, cauliflower) for fritters
Instructions
- In a bowl, whisk together yogurt, gram flour, and water until smooth. Set aside.
- Heat oil in a deep pan for frying.
- In another pan, heat some oil and add cumin seeds, fenugreek seeds, mustard seeds, and asafoetida. Sauté until the seeds crackle.
- Add chopped onion, ginger, and green chili. Sauté until the onion turns golden brown.
- Pour the yogurt mixture into the pan and stir well. Add turmeric powder, red chili powder, and salt. Cook on low heat, stirring occasionally, for 30-35 minutes.
- Meanwhile, prepare the fritters by mixing sliced vegetables with gram flour, salt, and water to form a thick batter. Drop spoonfuls of the batter into the hot oil and fry until golden and crispy.
- Add the fritters to the curry and simmer for another 5 minutes.
- Garnish with chopped cilantro and serve hot with steamed rice or naan.
