Ingredients

  • 2 cups yogurt
  • 1/4 cup gram flour (besan)
  • 1 onion, finely chopped
  • 1/2 inch ginger, grated
  • 1 green chili, chopped
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp mustard seeds
  • 1/4 tsp asafoetida (hing)
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 10-12 curry leaves
  • 1/4 cup fresh cilantro, chopped
  • 3 cups water
  • Salt to taste
  • Oil for frying
  • 1/2 cup sliced vegetables (onion, bell pepper, cauliflower) for fritters

Instructions

  1. In a bowl, whisk together yogurt, gram flour, and water until smooth. Set aside.
  2. Heat oil in a deep pan for frying.
  3. In another pan, heat some oil and add cumin seeds, fenugreek seeds, mustard seeds, and asafoetida. Sauté until the seeds crackle.
  4. Add chopped onion, ginger, and green chili. Sauté until the onion turns golden brown.
  5. Pour the yogurt mixture into the pan and stir well. Add turmeric powder, red chili powder, and salt. Cook on low heat, stirring occasionally, for 30-35 minutes.
  6. Meanwhile, prepare the fritters by mixing sliced vegetables with gram flour, salt, and water to form a thick batter. Drop spoonfuls of the batter into the hot oil and fry until golden and crispy.
  7. Add the fritters to the curry and simmer for another 5 minutes.
  8. Garnish with chopped cilantro and serve hot with steamed rice or naan.
