Ingredients
- 2 cans of young jackfruit, drained and rinsed
- 1 cup of coconut milk
- 1 cup of water
- 4 bay leaves
- 1 teaspoon of coriander seeds
- 1 teaspoon of galangal, sliced
- 4 cloves of garlic, minced
- 4 shallots, sliced
- 1 tablespoon of palm sugar
- Salt to taste
Instructions
- Using a large pot, combine the young jackfruit, coconut milk, water, bay leaves, coriander seeds, galangal, garlic, shallots, and palm sugar.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
- Once the stew thickens and the flavors have melded together, season with salt to taste.
- Remove from heat and let it cool slightly before serving.
