Ingredients

  • 2 cans of young jackfruit, drained and rinsed
  • 1 cup of coconut milk
  • 1 cup of water
  • 4 bay leaves
  • 1 teaspoon of coriander seeds
  • 1 teaspoon of galangal, sliced
  • 4 cloves of garlic, minced
  • 4 shallots, sliced
  • 1 tablespoon of palm sugar
  • Salt to taste

Instructions

  1. Using a large pot, combine the young jackfruit, coconut milk, water, bay leaves, coriander seeds, galangal, garlic, shallots, and palm sugar.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for 2 hours, stirring occasionally.
  3. Once the stew thickens and the flavors have melded together, season with salt to taste.
  4. Remove from heat and let it cool slightly before serving.
