Ingredients
- 1 lb fresh mushrooms, such as shiitake or oyster mushrooms
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp soy sauce

- 1/2 tsp sesame oil
- 1/4 cup green onions, chopped

Instructions
- Wash and dry the mushrooms, then slice them into thin strips.

- Add the garlic and ginger, and stir-fry for 30 seconds until fragrant.
- Add the mushrooms to the wok and stir-fry for 3-4 minutes until they start to soften.
- Stir in the soy sauce, sugar, and sesame oil, and continue to cook for another 2-3 minutes.
- Season with salt and pepper to taste, then sprinkle with chopped green onions before serving.
