Ingredients
- 2 large eggplants, cut into chunks
- 3 tablespoons soy sauce
- 2 tablespoons sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 cup vegetable broth
- 2 green onions, chopped
- 2 tablespoons vegetable oil
Instructions
- In a small bowl, mix together soy sauce, sugar, rice vinegar, and sesame oil to make the sauce.
- Heat vegetable oil in a large pan over medium heat. Add garlic and ginger, and stir-fry for 1 minute.
- Add the eggplant chunks to the pan and cook for 5 minutes, stirring occasionally.
- Pour the sauce and vegetable broth into the pan. Cover and simmer for 15 minutes, or until the eggplant is tender.
