Ingredients
- 2 lbs yucca, peeled and cut into fries
- Vegetable oil for frying
- Salt to taste
- 1 cup fresh parsley, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1/2 cup olive oil
Instructions
- In a large pot, bring water to a boil and add the yucca fries. Cook for about 10-15 minutes or until the yucca is tender but still holds its shape. Drain and let them cool.
- Heat the vegetable oil in a deep skillet over medium-high heat. Fry the yucca in batches until golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt.
- To make the chimichurri sauce, mix the parsley, garlic, red wine vinegar, oregano, and red pepper flakes in a bowl. Gradually whisk in the olive oil until well combined. Season with salt to taste.
- Serve the yucca fries with the chimichurri sauce on the side for dipping.
