Ingredients

  • 2 lbs yucca, peeled and cut into fries
  • Vegetable oil for frying
  • Salt to taste
  • 1 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup olive oil

Instructions

  1. In a large pot, bring water to a boil and add the yucca fries. Cook for about 10-15 minutes or until the yucca is tender but still holds its shape. Drain and let them cool.
  2. Heat the vegetable oil in a deep skillet over medium-high heat. Fry the yucca in batches until golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt.
  3. To make the chimichurri sauce, mix the parsley, garlic, red wine vinegar, oregano, and red pepper flakes in a bowl. Gradually whisk in the olive oil until well combined. Season with salt to taste.
  4. Serve the yucca fries with the chimichurri sauce on the side for dipping.
