Ingredients

  • 2 lbs yuca, peeled and cut into 3-inch pieces
  • 3 cups vegetable oil for frying
  • Salt to taste

Instructions

  1. Place the yuca pieces in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes or until the yuca is tender.
  2. Remove the yuca from the pot and let it cool slightly. Cut each piece in half lengthwise and remove the fibrous core from the center.
  3. Heat the vegetable oil in a deep skillet over medium-high heat. Fry the yuca pieces in batches until golden brown and crispy, about 5-7 minutes per batch.
  4. Remove the fried yuca from the oil and drain on paper towels. Sprinkle with salt to taste before serving.
