Yuca Fritters (Buñuelos de Yuca)
Buñuelos de Yuca, or Yuca Fritters, are a traditional Colombian dish made with yuca (cassava) and cheese. These crispy fritters are perfect for snacking or as a side dish.
Ingredients
- 2 lbs yuca (cassava), peeled and cut into chunks
- 1 cup grated mozzarella cheese
- 1 egg
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- Vegetable oil for frying
Instructions
- Boil the yuca chunks in salted water until tender, about 20 minutes. Drain and let cool.
- Mash the cooked yuca in a large bowl until smooth.
- Add the grated mozzarella, egg, cornstarch, and salt to the mashed yuca. Mix until well combined.
- Form the yuca mixture into small balls and flatten slightly to form fritters.
- Heat vegetable oil in a large skillet over medium heat. Fry the fritters in batches until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
- Serve the buñuelos de yuca warm and enjoy!
