Yucca Fritters (Buñuelos de Yuca)
Buñuelos de Yuca, or Yucca Fritters, are a popular Puerto Rican snack made from yucca root. These crispy fritters are perfect for a midday snack or as an appetizer for a gathering.
Ingredients
- 2 lbs yucca root, peeled and grated
- 1/2 cup all-purpose flour
- 1/4 cup finely chopped onion
- 2 garlic cloves, minced
- 1/4 cup chopped cilantro
- 1 tsp salt
- 1/2 tsp black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, combine the grated yucca, flour, onion, garlic, cilantro, salt, and black pepper. Mix well to form a thick batter.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the yucca batter and form it into a patty. Carefully place it in the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve the buñuelos de yuca hot with your favorite dipping sauce or enjoy them on their own.
