Yucca Fritters (Buñuelos de Yuca)

Ingredients

  • 2 lbs yucca root, peeled and grated
  • 1/2 cup all-purpose flour
  • 1/4 cup finely chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup chopped cilantro
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the grated yucca, flour, onion, garlic, cilantro, salt, and black pepper. Mix well to form a thick batter.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Scoop about 1/4 cup of the yucca batter and form it into a patty. Carefully place it in the hot oil and fry until golden brown, about 3-4 minutes per side.
  4. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
  5. Serve the buñuelos de yuca hot with your favorite dipping sauce or enjoy them on their own.
