Yukgaejang Spicy Beef Soup (육개장)

Ingredients
- 1 lb beef brisket, thinly sliced
- 6 cups water
- 1 onion, sliced
- 4 green onions, chopped
- 1/2 cup fernbrake (gosari), soaked and drained
- 1/2 cup sliced shiitake mushrooms
- 1/2 cup shredded carrot
- 1/2 cup mung bean sprouts
- 1/2 cup kimchi, chopped
- 2 tbsp hot pepper flakes
- 2 tbsp soy sauce
- 1 tbsp minced garlic
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the beef brisket and boil for 30 minutes, skimming off any foam that rises to the surface.
- Add the onion, green onions, fernbrake, shiitake mushrooms, carrot, and mung bean sprouts to the pot.
- Stir in the kimchi, hot pepper flakes, soy sauce, and minced garlic.
- Simmer for an additional 20 minutes, or until the beef and vegetables are tender.
- Season with salt, pepper, and sesame oil to taste.
- Serve hot and enjoy!
