Yukgaejang Spicy Beef Soup (육개장)

Ingredients

  • 1 lb beef brisket, thinly sliced
  • 6 cups water
  • 1 onion, sliced
  • 4 green onions, chopped
  • 1/2 cup fernbrake (gosari), soaked and drained
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup shredded carrot
  • 1/2 cup mung bean sprouts
  • 1/2 cup kimchi, chopped
  • 2 tbsp hot pepper flakes
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the beef brisket and boil for 30 minutes, skimming off any foam that rises to the surface.
  3. Add the onion, green onions, fernbrake, shiitake mushrooms, carrot, and mung bean sprouts to the pot.
  4. Stir in the kimchi, hot pepper flakes, soy sauce, and minced garlic.
  5. Simmer for an additional 20 minutes, or until the beef and vegetables are tender.
  6. Season with salt, pepper, and sesame oil to taste.
  7. Serve hot and enjoy!
