Ingredients
- 8 oz glass noodles
- 1 lb large shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 cup green onion, chopped
- 1/4 cup roasted peanuts, crushed
- 2-3 red chilies, thinly sliced (optional)
- 1/4 cup fish sauce
- 1/4 cup lime juice
- 2 tbsp sugar
- 2 cloves garlic, minced
Instructions
- Soak the glass noodles in warm water for 10 minutes, then drain and set aside.
- Bring a pot of water to a boil and cook the shrimp for 2-3 minutes until pink and cooked through. Drain and set aside.
- In a large bowl, combine the glass noodles, cooked shrimp, cherry tomatoes, red onion, cilantro, green onion, peanuts, and red chilies.
- In a small bowl, whisk together the fish sauce, lime juice, sugar, and minced garlic to make the dressing.
- Pour the dressing over the noodle and shrimp mixture, and toss to coat evenly.
- Transfer the salad to a serving platter and serve immediately.
