Ingredients

  • 8 oz glass noodles
  • 1 lb large shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onion, chopped
  • 1/4 cup roasted peanuts, crushed
  • 2-3 red chilies, thinly sliced (optional)
  • 1/4 cup fish sauce
  • 1/4 cup lime juice
  • 2 tbsp sugar
  • 2 cloves garlic, minced

Instructions

  1. Soak the glass noodles in warm water for 10 minutes, then drain and set aside.
  2. Bring a pot of water to a boil and cook the shrimp for 2-3 minutes until pink and cooked through. Drain and set aside.
  3. In a large bowl, combine the glass noodles, cooked shrimp, cherry tomatoes, red onion, cilantro, green onion, peanuts, and red chilies.
  4. In a small bowl, whisk together the fish sauce, lime juice, sugar, and minced garlic to make the dressing.
  5. Pour the dressing over the noodle and shrimp mixture, and toss to coat evenly.
  6. Transfer the salad to a serving platter and serve immediately.
