Ingredients
- 8 oz beef, thinly sliced
- 4 oz glass noodles
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1/2 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts
- 2 red chilies, thinly sliced
- 1/4 cup fish sauce
- 1/4 cup lime juice
- 2 tbsp sugar
- 2 garlic cloves, minced
Instructions
- Prepare the glass noodles according to the package instructions. Drain and set aside.
- In a small bowl, mix together fish sauce, lime juice, sugar, and minced garlic to make the dressing.
- In a large mixing bowl, combine the cooked beef, glass noodles, shredded carrots, sliced cucumber, cilantro, green onions, and chopped peanuts.
- Pour the dressing over the salad and toss until everything is well coated.
- Garnish with sliced red chilies and serve immediately.
