Ingredients

  • 8 oz beef, thinly sliced
  • 4 oz glass noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 2 red chilies, thinly sliced
  • 1/4 cup fish sauce
  • 1/4 cup lime juice
  • 2 tbsp sugar
  • 2 garlic cloves, minced

Instructions

  1. Prepare the glass noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together fish sauce, lime juice, sugar, and minced garlic to make the dressing.
  3. In a large mixing bowl, combine the cooked beef, glass noodles, shredded carrots, sliced cucumber, cilantro, green onions, and chopped peanuts.
