Yummy Lagman (Лагман)

Лагман is a traditional Kyrgyz noodle dish that is both hearty and flavorful. This recipe combines tender meat, fresh vegetables, and aromatic spices to create a satisfying meal that is perfect for any occasion.

Yummy Lagman (Лагман)

Ingredients

  • 500g lamb or beef, thinly sliced
  • 3 tablespoons vegetable oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 large carrots, julienned
  • 2 bell peppers, thinly sliced
  • 4 tomatoes, diced
  • 1 tablespoon tomato paste
  • 1 liter beef or vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon chili flakes
  • Salt and pepper to taste
  • 300g lagman noodles or other long noodles
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the sliced meat and cook until browned. Remove the meat from the pot and set aside.
  2. In the same pot, add the sliced onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Add the julienned carrots and sliced bell peppers to the pot. Cook for a few minutes until the vegetables start to soften.
  4. Stir in the diced tomatoes, tomato paste, and spices. Cook for another 5 minutes.
  5. Pour in the beef or vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes.
  6. While the broth is simmering, cook the lagman noodles according to the package instructions. Drain and set aside.
  7. Return the browned meat to the pot and let it simmer for an additional 10 minutes.
  8. To serve, divide the cooked noodles among serving bowls and ladle the hot broth and meat mixture over the noodles. Garnish with fresh cilantro.
