Yummy Lagman (Лагман)
Лагман is a traditional Kyrgyz noodle dish that is both hearty and flavorful. This recipe combines tender meat, fresh vegetables, and aromatic spices to create a satisfying meal that is perfect for any occasion.
Ingredients
- 500g lamb or beef, thinly sliced
- 3 tablespoons vegetable oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 large carrots, julienned
- 2 bell peppers, thinly sliced
- 4 tomatoes, diced
- 1 tablespoon tomato paste
- 1 liter beef or vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon chili flakes
- Salt and pepper to taste
- 300g lagman noodles or other long noodles
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the sliced meat and cook until browned. Remove the meat from the pot and set aside.
- In the same pot, add the sliced onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the julienned carrots and sliced bell peppers to the pot. Cook for a few minutes until the vegetables start to soften.
- Stir in the diced tomatoes, tomato paste, and spices. Cook for another 5 minutes.
- Pour in the beef or vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes.
- While the broth is simmering, cook the lagman noodles according to the package instructions. Drain and set aside.
- Return the browned meat to the pot and let it simmer for an additional 10 minutes.
- To serve, divide the cooked noodles among serving bowls and ladle the hot broth and meat mixture over the noodles. Garnish with fresh cilantro.
