Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup (60ml) soy sauce
- 2 tablespoons (30ml) vegetable oil
- 2 tablespoons (30ml) honey
- 1 tablespoon (15ml) rice vinegar
- 1 teaspoon (5g) ground cumin
- 1 teaspoon (5g) ground coriander
- 1 teaspoon (5g) chili powder
- 1/2 teaspoon (3g) garlic powder
- 1/2 teaspoon (3g) onion powder
- Salt and pepper to taste
- 8-10 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together soy sauce, vegetable oil, honey, rice vinegar, ground cumin, ground coriander, chili powder, garlic powder, onion powder, salt, and pepper.
- Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked bamboo skewers.
- Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
- Remove the chicken skewers from the grill and let them rest for a few minutes before serving.
