Yunnan-style Grilled Chicken Skewers (云南烤鸡串)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) vegetable oil
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5g) ground cumin
  • 1 teaspoon (5g) ground coriander
  • 1 teaspoon (5g) chili powder
  • 1/2 teaspoon (3g) garlic powder
  • 1/2 teaspoon (3g) onion powder
  • Salt and pepper to taste
  • 8-10 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together soy sauce, vegetable oil, honey, rice vinegar, ground cumin, ground coriander, chili powder, garlic powder, onion powder, salt, and pepper.
  2. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked bamboo skewers.
  4. Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
