Yunnan-style Grilled Fish (云南烤鱼)

Ingredients

  • 1 whole fish (such as tilapia or trout), cleaned and gutted
  • 3 tablespoons Yunnan-style chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3-4 green onions, cut into 2-inch pieces
  • 1 tablespoon vegetable oil
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Make 3-4 diagonal cuts on each side of the fish.
  3. In a small bowl, mix the Yunnan-style chili paste, soy sauce, minced ginger, and minced garlic.
  4. Brush the fish with the chili paste mixture, making sure to get the marinade into the cuts.
  5. Place the fish on the grill and cook for 10-12 minutes on each side, or until the fish is cooked through and has a nice char.
  6. In a separate pan, heat the vegetable oil over medium heat and sauté the bell peppers and green onions until they are slightly softened.
  7. Transfer the grilled fish to a serving platter and top with the sautéed bell peppers and green onions.
  8. Serve hot with steamed rice.
