Yunnan-style Grilled Lamb Skewers (云南烤羊肉串)

Ingredients

  • 1.5 lbs (700g) lamb, cut into 1-inch cubes
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30ml) rice wine
  • 2 tbsp (30ml) honey
  • 2 tsp (10g) cumin powder
  • 2 tsp (10g) chili powder
  • 1 tsp (5g) Sichuan peppercorns, crushed
  • 1/4 cup (60ml) vegetable oil
  • 1/4 cup (60ml) chopped cilantro for garnish

Instructions

  1. In a bowl, mix soy sauce, rice wine, honey, cumin powder, chili powder, Sichuan peppercorns, and vegetable oil to make the marinade.
  2. Add the lamb cubes to the marinade and coat them evenly. Let it marinate for at least 1 hour in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb cubes onto skewers.
  5. Grill the lamb skewers for about 3-4 minutes on each side, or until they are cooked to your desired doneness.
  6. Remove the lamb skewers from the grill and let them rest for a few minutes.
  7. Garnish with chopped cilantro and serve hot.
