Ingredients

  • 500g chicken feet
  • 2 tbsp Sichuan peppercorns
  • 3-4 dried red chilies
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1 star anise
  • 1 cinnamon stick
  • 1 tbsp cooking oil
  • 3 cups water
  • Salt to taste

Instructions

  1. Wash the chicken feet thoroughly and trim the nails if desired.
  2. In a wok, heat the cooking oil over medium heat. Add the Sichuan peppercorns, dried red chilies, ginger, garlic, green onions, star anise, and cinnamon stick. Stir-fry until fragrant.
  3. Add the chicken feet to the wok and stir-fry for 5-7 minutes.
  4. Pour in the water and bring to a boil. Reduce the heat, cover, and simmer for 1 hour or until the chicken feet are tender.
  5. Season with salt to taste.
  6. Transfer the cooked chicken feet to a serving dish and garnish with additional chopped green onions if desired.
