Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1/2 cup diced tofu
- 3-4 cloves garlic, minced
- 2-3 green onions, chopped
- 2-3 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon chili paste
- 1 teaspoon Sichuan peppercorns
Instructions
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
- Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining oil in the wok, then add the minced garlic and Sichuan peppercorns. Stir-fry for 1-2 minutes until fragrant.
- Add the mixed vegetables and diced tofu, and stir-fry for 2-3 minutes until the vegetables are tender.
- Add the cooked rice, soy sauce, and chili paste to the wok. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
- Return the scrambled eggs to the wok and mix well with the rice and vegetables.
- Add the chopped green onions and stir-fry for an additional 1-2 minutes.
- Remove from heat and serve the Yunnan-style spicy fried rice hot.
