Ingredients

  • 2 large eggplants, diced
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Add the diced eggplants and cook until they are soft and tender.
  4. Add the diced tomatoes, cumin, paprika, cayenne pepper, and salt. Cook for an additional 10 minutes, stirring occasionally.
  5. Remove from heat and let the mixture cool slightly.
  6. Transfer the mixture to a food processor and pulse until it reaches your desired consistency.
  7. Transfer the zaalouk to a serving dish, garnish with fresh parsley, and serve with pita bread or crackers.
