Ingredients
- 2 large eggplants, diced
- 2 tomatoes, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup olive oil
- Salt to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced eggplants and cook until they are soft and tender.
- Add the diced tomatoes, cumin, paprika, cayenne pepper, and salt. Cook for an additional 10 minutes, stirring occasionally.
- Remove from heat and let the mixture cool slightly.
- Transfer the mixture to a food processor and pulse until it reaches your desired consistency.
- Transfer the zaalouk to a serving dish, garnish with fresh parsley, and serve with pita bread or crackers.
