Zaalouk is a traditional Berber-spiced roasted tomato dip that is popular in Berber cuisine. It is a flavorful and aromatic dish that is perfect for dipping bread or serving as a side dish.
Ingredients
- 4 large tomatoes, roasted and peeled
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Roast the tomatoes in the oven until the skins are charred. Peel and chop the tomatoes.
- In a pan, heat the olive oil and sauté the onions and garlic until soft.
- Add the chopped tomatoes, cumin, paprika, cayenne pepper, and salt to the pan. Cook for 15-20 minutes, stirring occasionally.
- Remove from heat and let the mixture cool slightly. Then, use a fork or potato masher to mash the mixture to your desired consistency.
- Garnish with fresh cilantro before serving.
