Zaalouk (berber-spiced Roasted Tomato Dip)

Ingredients

  • 4 large tomatoes, roasted and peeled
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Roast the tomatoes in the oven until the skins are charred. Peel and chop the tomatoes.
  2. In a pan, heat the olive oil and sauté the onions and garlic until soft.
  3. Add the chopped tomatoes, cumin, paprika, cayenne pepper, and salt to the pan. Cook for 15-20 minutes, stirring occasionally.
  4. Remove from heat and let the mixture cool slightly. Then, use a fork or potato masher to mash the mixture to your desired consistency.
  5. Garnish with fresh cilantro before serving.
