Ingredients

  • 2 large eggplants, roasted and peeled
  • 4 ripe tomatoes, roasted and peeled
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • Salt to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Roast the eggplants and tomatoes until charred and tender. Let them cool, then peel and chop them.
  2. In a pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
  3. Add the chopped eggplants and tomatoes to the pan, and stir in the cumin, paprika, and cayenne pepper. Cook for 10-15 minutes, mashing the vegetables with a fork as they cook.
