Zaalouk is a traditional Moroccan salad made with roasted eggplant and tomatoes, flavored with a blend of aromatic spices. This dish is a perfect combination of smoky, savory, and tangy flavors, making it a popular side dish or appetizer in Moroccan cuisine.
Ingredients
- 2 large eggplants, roasted and peeled
- 4 ripe tomatoes, roasted and peeled
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
- Salt to taste
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Roast the eggplants and tomatoes until charred and tender. Let them cool, then peel and chop them.
- In a pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
- Add the chopped eggplants and tomatoes to the pan, and stir in the cumin, paprika, and cayenne pepper. Cook for 10-15 minutes, mashing the vegetables with a fork as they cook.
- Season with salt to taste and garnish with chopped parsley before serving.
