Ingredients

  • 2 large eggplants, roasted and peeled
  • 3 red bell peppers, roasted and peeled
  • 4 ripe tomatoes, peeled and chopped
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup sunflower oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the sunflower oil over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are soft and translucent.
  3. Add the chopped tomatoes and cook until they break down and form a thick sauce.
  4. Meanwhile, chop the roasted eggplants and red peppers into small pieces.
  5. Add the chopped eggplants and red peppers to the pot, and stir to combine with the tomato sauce.
  6. Cook the mixture over low heat for about 30-40 minutes, stirring occasionally, until it thickens to a spreadable consistency.
  7. Season with salt and pepper to taste.
  8. Remove from heat and let it cool before serving.
