Zacusca (romanian Eggplant Spread)
Zacusca is a traditional Romanian spread made with roasted eggplant, red peppers, and tomatoes. It is a popular dish in Romanian cuisine, often enjoyed as a spread on bread or as a side dish.
Ingredients
- 2 large eggplants, roasted and peeled
- 3 red bell peppers, roasted and peeled
- 4 ripe tomatoes, peeled and chopped
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1/4 cup sunflower oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the sunflower oil over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are soft and translucent.
- Add the chopped tomatoes and cook until they break down and form a thick sauce.
- Meanwhile, chop the roasted eggplants and red peppers into small pieces.
- Add the chopped eggplants and red peppers to the pot, and stir to combine with the tomato sauce.
- Cook the mixture over low heat for about 30-40 minutes, stirring occasionally, until it thickens to a spreadable consistency.
- Season with salt and pepper to taste.
- Remove from heat and let it cool before serving.
