Zafrani Pulao (fragrant Cardamom Rice)

Ingredients

  • 2 cups basmati rice, soaked for 30 minutes and drained
  • 4 cups water
  • 1/2 teaspoon saffron threads
  • 4 green cardamom pods
  • 2 tablespoons ghee (clarified butter)
  • 1 onion, thinly sliced
  • 1/4 cup mixed nuts (cashews, almonds, and raisins)
  • Salt to taste

Instructions

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
  2. In a large pot, bring 4 cups of water to a boil. Add the drained rice and cardamom pods. Cook until the rice is 70% done. Drain and set aside.
  3. In a separate pan, heat ghee over medium heat. Add the sliced onions and sauté until golden brown. Add the mixed nuts and sauté until they are lightly browned.
  4. Transfer the cooked rice to the pan with the onions and nuts. Pour the saffron water over the rice. Sprinkle with salt and gently mix everything together.
  5. Cover the pan with a lid and cook the rice on low heat for 10-15 minutes, allowing the flavors to blend together.
  6. Once the rice is cooked, fluff it with a fork and serve hot.
