Zafrani Pulao (fragrant Cardamom Rice)
Zafrani Pulao, also known as Fragrant Cardamom Rice, is a delicious and aromatic rice dish that is popular in Navyath Muslim Cuisine. This dish is infused with the rich flavors of saffron and cardamom, making it a perfect accompaniment to any meal.
Ingredients
- 2 cups basmati rice, soaked for 30 minutes and drained
- 4 cups water
- 1/2 teaspoon saffron threads
- 4 green cardamom pods
- 2 tablespoons ghee (clarified butter)
- 1 onion, thinly sliced
- 1/4 cup mixed nuts (cashews, almonds, and raisins)
- Salt to taste
Instructions
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water and set aside.
- In a large pot, bring 4 cups of water to a boil. Add the drained rice and cardamom pods. Cook until the rice is 70% done. Drain and set aside.
- In a separate pan, heat ghee over medium heat. Add the sliced onions and sauté until golden brown. Add the mixed nuts and sauté until they are lightly browned.
- Transfer the cooked rice to the pan with the onions and nuts. Pour the saffron water over the rice. Sprinkle with salt and gently mix everything together.
- Cover the pan with a lid and cook the rice on low heat for 10-15 minutes, allowing the flavors to blend together.
- Once the rice is cooked, fluff it with a fork and serve hot.
