Zanzibari Chicken Samosas

Ingredients

  • 1 lb ground chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp curry powder
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 12 sheets of samosa pastry or phyllo dough
  • Vegetable oil for frying

Instructions

  1. In a large skillet, cook the ground chicken over medium heat until browned. Add the onion, garlic, and ginger, and cook until the onion is soft.
  2. Stir in the curry powder, cumin, turmeric, cilantro, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat and let the filling cool.
  3. Place a spoonful of the chicken filling onto each samosa pastry sheet, then fold the pastry over the filling to form a triangle. Seal the edges with a little water.
  4. Heat the vegetable oil in a deep pan over medium heat. Fry the samosas in batches until golden brown and crispy, then drain on paper towels.
