Zanzibari Coconut Caramel Flan
Indulge in the rich and creamy flavors of Zanzibar with this delightful Coconut Caramel Flan. This dessert is a perfect combination of tropical coconut and decadent caramel, creating a luscious treat that will transport you to the exotic island of Zanzibar.
Ingredients
- 1 cup sugar
- 1/4 cup water
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 5 large eggs
- 1 teaspoon vanilla extract
Instructions
- In a small saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar is dissolved. Continue to cook, without stirring, until the mixture turns a deep amber color. Immediately pour the caramel into the bottom of a 9-inch round baking dish, tilting the dish to evenly coat the bottom. Set aside to cool and harden.
- Preheat the oven to 350°F (175°C).
- In a blender, combine the sweetened condensed milk, coconut milk, eggs, and vanilla extract. Blend until smooth.
- Pour the coconut mixture over the hardened caramel in the baking dish.
- Place the baking dish in a larger roasting pan. Fill the roasting pan with enough hot water to reach halfway up the sides of the baking dish.
- Bake in the preheated oven for 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove the flan from the water bath and let it cool to room temperature. Then, refrigerate for at least 4 hours, or overnight, until completely chilled.
- To serve, run a knife around the edge of the flan and invert it onto a serving platter. The caramel will create a luscious sauce over the top of the flan.
