Ingredients
- 1 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced

- 1 red bell pepper, sliced
- 1 cup green beans, trimmed
- 1 cup cauliflower florets
- 1 cup carrots, sliced
- 2 cups coconut milk
- 2 tbsp curry powder
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the coconut oil over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the red bell pepper, green beans, cauliflower, and carrots. Cook for 5 minutes, stirring occasionally.
