Zanzibari Coconut Lime Bars

Ingredients

  • 1 1/2 cups shredded coconut
  • 1 1/2 cups all-purpose flour
  • 3/4 cup powdered sugar
  • 1/2 cup coconut oil, melted
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. In a large bowl, combine the shredded coconut, flour, and powdered sugar. Stir in the melted coconut oil until the mixture is crumbly.
  3. Press the mixture into the bottom of the prepared baking dish. Bake for 15 minutes, or until the edges are golden brown.
  4. While the crust is baking, prepare the filling. In a separate bowl, whisk together the lime juice, lime zest, vanilla extract, and salt.
  5. Pour the filling over the hot crust, then return the dish to the oven and bake for an additional 10 minutes, or until the filling is set.
  6. Allow the bars to cool completely in the dish before cutting into squares. Refrigerate for at least 1 hour before serving.
