Ingredients
- 1 1/2 cups shredded coconut
- 1 1/2 cups all-purpose flour
- 3/4 cup powdered sugar
- 1/2 cup coconut oil, melted
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
- In a large bowl, combine the shredded coconut, flour, and powdered sugar. Stir in the melted coconut oil until the mixture is crumbly.
- Press the mixture into the bottom of the prepared baking dish. Bake for 15 minutes, or until the edges are golden brown.
- While the crust is baking, prepare the filling. In a separate bowl, whisk together the lime juice, lime zest, vanilla extract, and salt.
- Pour the filling over the hot crust, then return the dish to the oven and bake for an additional 10 minutes, or until the filling is set.
- Allow the bars to cool completely in the dish before cutting into squares. Refrigerate for at least 1 hour before serving.
