Zanzibari Fish Coconut Curry

Ingredients

  • 1 lb white fish fillets
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tomatoes, diced
  • 1 green chili, chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat some oil in a large pan over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the spices (turmeric, cumin, coriander, paprika, and cinnamon) to the pan and cook for a minute to release their flavors.
  3. Pour in the coconut milk and stir well. Add the diced tomatoes and green chili. Let the mixture simmer for 5 minutes.
  4. Gently place the fish fillets into the pan, spooning the sauce over them. Cover and cook for 10-15 minutes or until the fish is cooked through.
