Ingredients
- 1 lb white fish fillets
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1 can (14 oz) coconut milk
- 2 tomatoes, diced
- 1 green chili, chopped
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat some oil in a large pan over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the spices (turmeric, cumin, coriander, paprika, and cinnamon) to the pan and cook for a minute to release their flavors.
- Pour in the coconut milk and stir well. Add the diced tomatoes and green chili. Let the mixture simmer for 5 minutes.
- Gently place the fish fillets into the pan, spooning the sauce over them. Cover and cook for 10-15 minutes or until the fish is cooked through.
- Season with salt to taste and garnish with fresh cilantro. Serve the Zanzibari Fish Coconut Curry hot with steamed rice or crusty bread.
