- 1 ripe pineapple, peeled, cored, and chopped
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1/4 cup water
Instructions
- In a blender, combine the chopped pineapple, coconut milk, sugar, and water. Blend until smooth.
- Pour the mixture into a shallow dish and place it in the freezer.
- Every 30 minutes, remove the dish from the freezer and stir the sorbet with a fork to break up any ice crystals. Repeat this process for about 3-4 hours, or until the sorbet is firm and scoopable.
- Serve the Pineapple Coconut Sorbet in chilled bowls or in hollowed-out pineapple halves for a beautiful presentation.
