Zanzibari Pineapple Upside-down Cake

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1 can (20 oz) pineapple slices, drained
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup pineapple juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter and pour it into a 9x9 inch square baking pan.
  3. Sprinkle the brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices on top of the brown sugar. Place a cherry in the center of each pineapple slice.
  5. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  6. Add the vegetable oil, pineapple juice, and vanilla extract to the dry ingredients. Mix until well combined.
