Ingredients
- 1 large zapallo squash
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 cup frozen peas
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup grated cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the top off the zapallo squash and scoop out the seeds and fibers from the center to create a hollow cavity.
- In a skillet, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft. Drain any excess fat.
- Stir in the cooked rice, frozen peas, paprika, salt, and pepper. Cook for an additional 5 minutes, then remove from heat.
- Stuff the hollowed-out squash with the beef and rice mixture, then sprinkle the grated cheese on top.
- Place the stuffed squash on a baking sheet and bake in the preheated oven for 1 hour, or until the squash is tender when pierced with a fork.
- Remove from the oven and let it cool for a few minutes before serving.
