Zarda (assyrian Spiced Rice Pudding)
Zarda is a traditional Assyrian spiced rice pudding that is often served during special occasions and celebrations. This creamy and aromatic dessert is flavored with saffron, cardamom, and rose water, creating a delightful blend of flavors.
Ingredients
- 1 cup basmati rice
- 2 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon saffron threads
- 4 green cardamom pods, lightly crushed
- 1/4 cup chopped mixed nuts (almonds, pistachios, cashews)
- 1 tablespoon rose water
- 1 tablespoon ghee (clarified butter)
Instructions
- In a heavy-bottomed pan, combine the rice and milk. Bring to a gentle simmer over medium heat, stirring occasionally.
- Add the sugar, saffron, and cardamom pods to the rice and milk mixture. Continue to simmer, stirring frequently, until the rice is tender and the mixture has thickened, about 25-30 minutes.
- Stir in the chopped nuts, rose water, and ghee. Cook for an additional 2-3 minutes, then remove from heat.
- Divide the zarda into serving bowls and garnish with additional nuts if desired. Serve warm or chilled.
