Ingredients
- 1 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon saffron threads
- 1/2 teaspoon ground cardamom
- 1/4 cup chopped nuts (almonds, pistachios, or cashews)
- 1/4 cup raisins
Instructions
- In a large pot, bring the milk to a gentle boil over medium heat.
- Rinse the basmati rice under cold water, then add it to the boiling milk.
- Stir in the sugar, saffron threads, and ground cardamom.
- Reduce the heat to low and let the rice pudding simmer for 30-35 minutes, stirring occasionally, until the rice is cooked and the mixture has thickened.
- Stir in the chopped nuts and raisins, then remove the pot from the heat.
- Let the zarda cool for a few minutes before serving warm, or chill it in the refrigerator for a few hours for a cold dessert.
