Ingredients

  • 1 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon saffron threads
  • 1/4 cup chopped pistachios
  • 1/4 teaspoon ground cardamom
  • 1/4 cup heavy cream

Instructions

  1. In a large pot, combine the basmati rice and whole milk. Bring to a gentle boil over medium heat, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  2. Stir in the sugar, saffron threads, chopped pistachios, and ground cardamom. Continue to simmer for an additional 10-15 minutes, or until the pudding thickens to your desired consistency.
