Zarda (creamy Saffron And Pistachio Rice Pudding)
Zarda is a traditional Afghan dessert that is creamy, aromatic, and absolutely delicious. This creamy saffron and pistachio rice pudding is the perfect way to end a meal on a sweet note.
Ingredients
- 1 cup basmati rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon saffron threads
- 1/4 cup chopped pistachios
- 1/4 teaspoon ground cardamom
- 1/4 cup heavy cream
Instructions
- In a large pot, combine the basmati rice and whole milk. Bring to a gentle boil over medium heat, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- Stir in the sugar, saffron threads, chopped pistachios, and ground cardamom. Continue to simmer for an additional 10-15 minutes, or until the pudding thickens to your desired consistency.
- Remove the pot from the heat and stir in the heavy cream. Allow the zarda to cool slightly before serving.
