Zarda Pulao (fragrant Saffron And Pistachio Pilaf)
Zarda Pulao is a fragrant and flavorful rice dish that is popular in Navyath Muslim Cuisine. This aromatic pilaf is made with saffron, pistachios, and a blend of spices, creating a dish that is both visually stunning and delicious.
Ingredients
- 2 cups basmati rice
- 4 cups water
- 1/2 teaspoon saffron threads
- 1/4 cup ghee
- 1/2 cup sugar
- 1/4 cup pistachios, chopped
- 1/4 cup almonds, sliced
- 1 teaspoon cardamom powder
- 1 cinnamon stick
- 1/4 teaspoon nutmeg, grated
- 1/4 teaspoon rose water
- Pinch of salt
Instructions
- Rinse the basmati rice until the water runs clear, then soak the rice in water for 30 minutes.
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water.
- In a large pot, heat the ghee over medium heat. Add the soaked and drained rice, and sauté for 5 minutes.
- Pour in 4 cups of water, add the saffron water, sugar, pistachios, almonds, cardamom powder, cinnamon stick, nutmeg, and a pinch of salt. Stir well.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Once done, drizzle rose water over the rice and gently fluff it with a fork.
- Transfer the Zarda Pulao to a serving dish, garnish with additional pistachios and almonds if desired, and serve hot.
