Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1/2 teaspoon saffron threads
  • 1/4 cup ghee
  • 1/2 cup sugar
  • 1/4 cup pistachios, chopped
  • 1/4 cup almonds, sliced
  • 1 teaspoon cardamom powder
  • 1 cinnamon stick
  • 1/4 teaspoon nutmeg, grated
  • 1/4 teaspoon rose water
  • Pinch of salt

Instructions

  1. Rinse the basmati rice until the water runs clear, then soak the rice in water for 30 minutes.
  2. In a small bowl, soak the saffron threads in 2 tablespoons of warm water.
  3. In a large pot, heat the ghee over medium heat. Add the soaked and drained rice, and sauté for 5 minutes.
  4. Pour in 4 cups of water, add the saffron water, sugar, pistachios, almonds, cardamom powder, cinnamon stick, nutmeg, and a pinch of salt. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Once done, drizzle rose water over the rice and gently fluff it with a fork.
  7. Transfer the Zarda Pulao to a serving dish, garnish with additional pistachios and almonds if desired, and serve hot.
