Zefir Zest
Zefir Zest is a delightful Russian dessert that combines the lightness of zefir with a burst of citrus flavor. This recipe is perfect for those who enjoy a sweet treat with a refreshing twist.
Ingredients
- 3 cups sugar
- 1 cup water
- 1/2 cup corn syrup
- 4 envelopes unflavored gelatin
- 1/2 cup cold water
- 1/2 cup citrus juice (lemon, orange, or a combination)
- 1/4 cup powdered sugar
- 1/4 cup cornstarch
- 1/4 cup confectioners' sugar
Instructions
- In a saucepan, combine the sugar and 1 cup of water. Bring to a boil and cook until the sugar is dissolved, about 5 minutes.
- In a separate bowl, sprinkle the gelatin over 1/2 cup of cold water and let it stand for 5 minutes.
- Once the sugar is dissolved, add the corn syrup to the saucepan and stir to combine. Remove from heat and stir in the softened gelatin until completely dissolved.
- Stir in the citrus juice and mix well. Pour the mixture into a 9x13 inch dish and refrigerate for at least 2 hours, or until set.
- In a small bowl, combine the powdered sugar and cornstarch. Use this mixture to dust a cutting board or work surface.
- Once the zefir is set, use a knife to loosen the edges and invert it onto the prepared surface. Cut into small squares and dust with confectioners' sugar.
