Ingredients

  • 3 cups sugar
  • 1 cup water
  • 1/2 cup corn syrup
  • 4 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup citrus juice (lemon, orange, or a combination)
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • 1/4 cup confectioners' sugar

Instructions

  1. In a saucepan, combine the sugar and 1 cup of water. Bring to a boil and cook until the sugar is dissolved, about 5 minutes.
  2. In a separate bowl, sprinkle the gelatin over 1/2 cup of cold water and let it stand for 5 minutes.
  3. Once the sugar is dissolved, add the corn syrup to the saucepan and stir to combine. Remove from heat and stir in the softened gelatin until completely dissolved.
  4. Stir in the citrus juice and mix well. Pour the mixture into a 9x13 inch dish and refrigerate for at least 2 hours, or until set.
  5. In a small bowl, combine the powdered sugar and cornstarch. Use this mixture to dust a cutting board or work surface.
  6. Once the zefir is set, use a knife to loosen the edges and invert it onto the prepared surface. Cut into small squares and dust with confectioners' sugar.
